Executive Chef Paul Irish

Chef Paul Irish is a classically trained European chef, nutritionist, and culinary creative with more than three decades of experience across fine dining, hospitality leadership, and performance-driven nutrition. Born in the village of Inagh, County Clare, on Ireland’s wild Atlantic coast, his culinary philosophy was shaped long before professional kitchens - in the fields, gardens, and rhythms of a working family farm.
Growing up between the Cliffs of Moher and the rolling Clare countryside, Paul learned early that exceptional food begins with respect for ingredients. What was grown, raised, and harvested on the land became the foundation of his palate. An instinct for freshness, seasonality, and simplicity that continues to define his work today.
From those beginnings, Paul trained and worked across Ireland’s leading food cities, including Galway and Dublin, where he developed a deep command of European technique and classical flavour construction. His career has spanned both traditional and contemporary kitchens, allowing him to refine a style that is disciplined, expressive, and grounded in craft.
Australia offered Paul a new creative landscape. One rich in produce, multicultural influence, and culinary freedom. It was here that his work evolved into its most distinctive form: a refined European sensibility paired with modern Australian abundance, and an unwavering focus on how food makes people feel.
Beyond the kitchen, Paul is also a qualified nutritionist with a Diploma in Health Sciences. His approach to food is therefore both indulgent and intelligent. Designed not only to taste extraordinary, but to support strength, energy, and longevity. Every dish reflects this dual mastery: culinary precision guided by physiological understanding.
Today, Chef Paul Irish creates food that is elegant, nourishing, and deeply considered. Whether in intimate dining experiences, immersive cooking classes, or his signature chef-designed meals, his work reflects a simple belief: that great food should elevate both the body and the soul.
Vanessa Moodley

Vanessa Moodley is the co-founder and creative force behind The Shared Flame, bringing together cultural heritage, culinary intuition, and business precision.
Born in Pietermaritzburg in the Kingdom of the Zulu, her earliest relationship with food was formed around Durban curries, bunny chows, and the ritual of weekend braais, where fire, spice, and storytelling were as important as the meal itself.
Though not a chef by trade, Vanessa has a deeply instinctive understanding of flavour, balance, and technique. She moves easily between cultures and cuisines, with a palate shaped by South African Indian tradition and a lifelong curiosity for how ingredients speak to one another.
Her passion for fermentation and sourdough artistry reflects this philosophy: patient, intentional, and rooted in craft.
Alongside her love of food, Vanessa has built a successful corporate career in business transformation and performance leadership. It is this rare combination of vision and discipline that defines her role within The Shared Flame, shaping not just what is served, but how every experience feels. She curates the narrative, the flow, and the emotional tone that transforms dining into something immersive and unforgettable. For Vanessa, food is never just sustenance.
